Caprese Salad with Herby Green Goddess Style Dressing

Memorial Day is just around the corner and it is the unofficial kick-off to summer! I have a twist on a summer bbq classic that will hit at your next summer bbq or picnic...
​I love a traditional Caprese Salad especially with the freshest ingredients but sometimes you want to change it up.

Ingredients:
1 pint cherry tomatoes
2 heirloom tomatoes
1 pound fresh mozzarella, hand pulled apart
3 tbs. fresh dill
3 tbs. fresh chives
3 tbs. fresh parsley
1/4 cup olive oil
1 lemon, juiced and zested
Salt and Pepper to taste
​Optional: 1 bunch fresh basil

Instructions:
First pick out your platter you want to plate your salad on, because you will be building your salad on it. Slice the cherry tomatoes in half and quarter the heirloom tomatoes. Arrange the sliced tomatoes on the platter and season with salt and pepper. In a food processor add your fresh dill,fresh chives, fresh parsley, olive oil, lemon zest and lemon juice and blend until you get a smooth dressing. You may need to scrape down the sides to make sure all the herbs get blended. Tear apart the fresh mozzarella into bite size pieces and arrange on the platter. Drizzle with dressing and serve. You can make the salad up to an hour or two before serving just wait to drizzle with dressing right before serving.
