Chocolatey Trail Mix Clusters
If you know me you know that I am a huge trail mix fan, especially as a delicious, nutritious  afternoon snack. I found a way to improve on it.....
Introducing a Kid-Friendly Twist to the Classic Afternoon Snack!  I've revamped my all-time favorite afternoon snack to cater to our little ones. By adding a touch of chocolate and transforming it into a delightful cookie, I've created a delicious treat that perfectly bridges the gap between school and sports activities. These on-the-go cookies are not only scrumptious but also a great source of energy for kids tackling their homework!


​Ingredients:
2 cups favorite nuts or allergy friendly alternative
1/4 cup sesame seeds
1 cup pumpkin seeds
1/4 cup raisins or dried cranberries
1 1/2 cups allergy friends chocolate
2 tsp. coconut oil
Optional: 1/3 cup unsweetened coconut flakes

Instructions
:
Line a rimmed baking sheet with parchment and set aside. In a large bowl mix together the nuts, sesame seeds, raisins and pumpkin seeds until well combined. Add in the coconut flakes as well if using.

In a small heat safe bowl melt the chocolate with the 2 tsp. coconut oil. Place the bowl in the microwave for 30 second intervals stirring occasionally. Once fully melted pour over the trail mix mixture and stir gently. once everything is coated in the chocolate, make 2 tbs. clusters on the parchment lined baking sheet. Let set up on the tray in the refrigerator for an hour. Store in a airtight container in the fridge for up to a week or in the freezer for up to 3 months.
