Coconut Ginger Chicken Bowls

These Coconut Ginger Chicken Bowls are what happens when comfort food decides to be productive. Creamy coconut milk, warming ginger, and turmeric create big, cozy flavor while quietly supporting your body behind the scenes.
You’ve got lean protein from chicken to keep you full, sweet potatoes and brown rice for steady energy, and healthy fats that help everything stay balanced (and satisfying). Turmeric and ginger bring anti-inflammatory and digestion-loving perks, while kale jumps in at the end to make sure we can all agree this counts as a nutrient-dense meal.
It’s rich but not heavy, cozy but not a food coma, and flavorful enough to make you forget you’re eating something good for you. Basically: a bowl that works hard and tastes great.

Ingredients:

1 pound boneless skinless chicken breasts
2 tbs. olive oil
1 tsp. ground turmeric
1 inch fresh ginger root, peeled and grated
2 medium sweet potatoes, peeled and cut into ½ cubes
1 ¼ cup vegetable or chicken broth
13.5 oz can coconut milk
2 cups kale
2 cups brown rice, cooked
Salt and pepper to taste
Optional: 2tbs.fresh parsley, chopped

Directions:

Heat a large skillet over medium high heat. Add the olive oil and chicken to the skillet until it browns. Season the chicken with turmeric, ginger, salt and pepper. Cover the skillet and cook for 5 minutes. Add the sweet potatoes, broth and coconut milk, bring to a low simmer for 18-20 minutes. Finally, add the kale and cooked rice  for another 5 minutes. Serve with a garnish of chopped parsley.
