Coconut Turmeric Ginger Soup

Need a fast easy recipe to use up some of those leftover Thanksgiving ingredients? My Coconut Turmeric Ginger Soup is not only easy but healthy too.

Coconut Turmeric Ginger Stew

Instructions:

2 tbs. olive oil
½ cup carrots, peeled and chopped
¼ cup celery, chopped
1 tsp. ground turmeric
2 tsp. ground ginger or 1 inch chunk fresh ginger
1 medium sweet potato, cubed
¼ cup asparagus,stemmed and chopped
1 honey crisp apple, peeled and chopped
2 cups filtered water, vegetable broth or chicken broth
13.5 oz. can full-fat coconut milk
1 1/2 cups baby spinach or kale
½ cup gf orzo or brown rice
Salt and Pepper to taste
1 tsp. Apple cider vinegar
Garnish with 2 tsp. fresh parsley, chopped

Directions:
Warm a large pot with the olive oil and add the carrots, celery and sweet potatoes. Season with salt and pepper. Cook on medium for 3 to 4 minutes until slightly softened. Stir in the apple and asparagus and cook for another minute.. Pour in the broth, coconut milk, turmeric and ginger. Let simmer on low for 15-20 minutes, stirring occasionally. If using the rice or gf pasta add while simmering. Finally, add kale and apple cider vinegar for the last couple of minutes.  Taste for seasoning before serving.
