Cranberry Apple Crumble

​It’s that time of year where we have food on the brain all the time. What are making for Thanksgiving dinner? Do I have a Holiday party the week after? Who’s potluck did I get invited to? Cookie swap? The holidays evoke certain food memories that we all love and enjoy. For those of us that are cooking next week we have been painstakingly planning menus for our family and friends. Food is a way to show people how much we care and appreciate them.

You may love the classic dishes that you serve year after year or you may like to mix it up a bit. I like a healthy mix of both emphasis on healthy. I wanted a lighter option for my dessert table this year  and I think this crumble accomplishes that task. It’s quick, seasonal and won’t take a lot of oven time. It’s a great recipe to get the kids involved with too. No matter what you make this Thanksgiving as long as you make it with love, everything will be wonderful. Unless you end up on the news for blowing up the turkey 😉

Cranberry Apple Crumble
Makes about 6 servings
5 to 6 medium apples, chopped (such as gala, honey crisp or mackintosh)
¾ cup apple juice or apple cider
2 cups fresh cranberries, rinsed
½ cup brown sugar
1 tbsp. ground cinnamon
4 tbsp. Flour
Pinch salt

Crumble Topping :
½ cup brown sugar
1 tbsp. ground cinnamon
6 tbsp. softened unsalted butter
1 ½ cups, quick cooking oats
½ tsp. ground ginger, optional

Preheat oven to 350ᵒ. In a medium saucepan add cranberries, chopped apples, apple juice, ½ cup brown sugar, 1 tbsp. ground cinnamon and pinch of salt. Let apple cranberry mixture simmer until it slightly bubbles on the edges on the cranberries start to burst. (About 10-12 minutes) While mixture is simmering spray ramekins or baking dish with cooking spray and set aside until mixture is ready. Stir 4 tbs. flour into finished apple cranberry mixture before pouring into ramekins or 9×13 baking dish.

In a small mixing bowl mix together brown sugar, 1 tbsp cinnamon and quick cooking oats. Mix in softened butter into the oats with a fork or clean hands, until you get chunks. Cover the cranberry and apples completely with the oat crumble. Bake crumbles for 20 minutes or until the tops are brown and the edges are bubbling.
