Easy to Make Lettuce Wraps

Easy to Make Letucce Wraps
  • 1 head bibb lettuce
  • 2 carrots, peeled and cut into match sticks
  • 1/2 cucumber, seeded and cut into match sticks
  • 1/2 pound asparagus, chopped and peeled into ribbons
  • 1/2 pint cherry tomatoes, halved
  • 1 jalapeno, chopped
  • 2 tbs. fresh mint, chopped
  • 2 tbs. scallions, chopped
  • 1 lime, cut into segments
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Optional: Almonds, goat cheese or feta or cilantro

Wash and peel off the lettuce leaves whole, taking care not to break the leaves. Cut the carrots and cucumbers into matchsticks and set aside. For the asparagus, take a veggie peeler to create ribbons. Chop up the rest of the asparagus into coin shapes and set aside. Halve the tomatoes and chop the fresh herbs and set aside. Cut up the jalapeno and set aside. (Note: Remove the ribs and seeds to lessen the heat.) Once all ingredients are prepped you can start building your lettuce wraps.

To build, layer two lettuce leaves partially on top of each other and fill with a little amount of each veggie. Top with salt and pepper, fresh herbs, drizzle of olive oil and a squeeze of lime.
