GF Chocolate Protein Pancakes

ICYMI—I was on Western Mass News cooking GF Chocolate Protein Pancakes for Meal Prep Monday, in honor of Valentine's Day and heart health month. These pancakes are rich, fluffy, and chocolatey, but made with simple, nourishing ingredients that keep you feeling good long after breakfast is over.
 These pancakes are packed with protein from eggs and cottage cheese and naturally sweetened with pure maple syrup, they’re a great option for anyone looking to start their day strong or prep ahead for the week. They’re satisfying without being heavy and feel indulgent while still supporting your health goals.
With Valentine’s Day right around the corner, this recipe is a fun and cozy way to show a little love. Make them for someone special, share them with your family, or enjoy a quiet, chocolate-filled morning to yourself. Top them with fresh berries, extra maple syrup, or a few dark chocolate chunks to make them extra festive.
So if you missed me on Western Mass News, here’s your chance to whip up the same recipe at home—perfect for meal prep, weekend brunch, or a sweet-yet-healthy Valentine’s breakfast

Ingredients:
4 eggs
1 ½ cups cottage cheese
3 tbs. pure maple syrup
1 tsp. vanilla extract 
1 cup gf all purpose flour
2 ½ tbs. cacao powder or cocoa powder
¾ tsp. baking soda
2 tbs. coconut oil, melted for cooking
Optional: ½ cup almonds chopped or ¼ cup dark chocolate chunks

Directions:
In a large bowl whisk together eggs, cottage cheese, maple syrup and vanilla extract until well combined. In a separate bowl mix together the dry ingredients. ( gf all purpose flour, cacao powder and baking soda.) Fold the dry ingredients into the wet until the batter forms. Make sure not to over mix. Let the batter rest 5 minutes before cooking the pancakes. In a large skillet over medium low heat melt some of the coconut oil. Add the better in ¼ cup amounts to form the pancakes making sure to leave room between them for even cooking. Cook for 3-5 minutes on either side or until set and the edges are crisp. Serve with more maple syrup and fresh berries.
