Goodbye 2020!

I can't believe that 2020 is almost over. I seems like just yesterday the stay at home orders were given in March.
I can't help but feel like this year moved by so fast and slow at the same time. The months went quickly but the days went slowly. When I started to sit down and write this post, I decided to focus on the positives from this year. 

Here are my top 3:
  1. I got to spend more time with my family and stay more connecting to my extended family. I know being with our families more than ever has it's good and bad but at least we are still together in this upside down year. It has also taught me to be more patient, it is a virtue I am always working on.

  2. I had a chance to slow down and enjoy some of my favorite things that I always want to but am to busy to fit into my schedule. I am not putting anything off anymore.

  3. I have prioritized my self-care boundaries, mentally, physically and emotionally. It has made me be a better friend, daughter, business women and person.

I am still working on what I going to focus on personally for 2021 but I as we close out the year, I hope you all have been able to find a few positives this year. Let's say peace out 2020 and welcome 2021 with a calm clear mind.

NYE Marinated Crostini

1 pound mozzarella pearls or balls
2 tbs. fresh thyme, chopped
2 fresh rosemary, sprigs
1 cup cherry tomatoes
2 cans artichoke hearts, quartered (drained and rinsed)
1 cup Nicoise Olives
1/2 cup of Castroneves Olives
Salt 
Red crushed pepper
2 cups olive olive
1 baguette

Pour 1 inch of olive oil in a 1/2 gallon or smaller jar. Layer in the mozzarella balls, olives, tomatoes and artichokes. Add in the sprigs of rosemary, the chopped thyme, a pinch of crushed red pepper. Cover with the remaining olive oil and cover. Let marinate for 24 hours.

To serve: Preheat the oven to 350 degrees. Slice the baguette into 1/2 inch thick slices. Bake for 10 minutes or golden. Serve with marinated vegetables and cheese.
