Healthy Spicy Chicken Caesar Salad Pizza

If you told me a year ago that canned chicken would become the crust for my new pizza obsession, I probably wouldn’t have believed you. But I am all about turning comfort food favorites into healthier meals that still taste absolutely delicious. ​
 From this philosophy was born the Healthy Spicy Chicken Caesar Pizza.
The high-protein, low-carb, crunchy, creamy, spicy recipe that proves healthy eating does not have to be boring.

It was featured on Western Mass News Meal Prep Monday because this healthier twist on pizza deserves its moment. Also, why not start are week with pizza instead of waiting for the weekend.

Traditional Caesar salad may sound healthy, but most restaurant versions are loaded with heavy creamy dressing, excess calories, fried croutons, and very little protein to actually keep you full. This recipe changes all of that while still giving you the bold Caesar flavor everyone loves.

The crust is made with chicken, eggs, parmesan, mozzarella, and spices, it bakes into a golden, cheesy base that’s naturally low carb and packed with protein. Unlike traditional pizza crust, this version helps keep you fuller longer without the carb crash afterward. And let’s be honest — finding a healthy pizza that actually tastes good can feel impossible sometimes. (Note: I have tested this recipe with non-dairy cheese and it has worked well.)

The Caesar-inspired topping is where this recipe really shines. Instead of using a heavy mayo-based dressing, this version swaps in protein-rich Greek yogurt for a lighter option that still tastes creamy and satisfying. You still get all the tangy parmesan flavor you expect from Caesar dressing, but with added protein and less fat. Fresh lemon juice and zest brighten everything up while crushed red pepper flakes add just enough heat to keep every bite exciting. The romaine crunch, buttery avocado, green onions, and extra parmesan bringing everything together into the perfect balance of fresh and comforting.

Healthy Spicy Chicken Caesar Pizza

Ingredients:

Crust:
10 oz. canned and drained chicken
2 eggs
¼ cup parmesan cheese
½ cup mozzarella cheese, shredded
1 tsp. dried basil or Italian seasoning
Optional: ½ tsp. garlic powder
Other Ingredients:
1 cup plain greek yogurt
1 lemon zested and juiced
1 tsp. Dijon mustard
½ cup parmesan cheese 
½ tsp. crushed red pepper flakes
2 tsp. green onions, chopped
1 head romaine lettuce, washed and chopped
½ avocado, cubed
Optional: extra parmesan cheese for serving

Directions:

Preheat the oven to 400 degrees then line a baking sheet with parchment paper. Before mixing the ingredients for the crust make sure you pat dry the chicken or you will get a soggy crust.In a medium mixing bowl mix together the ingredients for the crust until fully combined. Scoop the crust mixture onto the prepared baking sheet and gently pat into an even circle or rectangle. Make sure to rotate the pan halfway through baking for even browning. Bake for 20-25 minutes until golden brown. Set aside to cool for a few minutes before adding the salad mixture.

While the crust bakes prepare the dressing. In a small bowl add the greek yogurt, lemon juice and zest, dijon mustard, parmesan cheese, crushed red pepper flakes and chopped green onions. Stir until fully mixed and all ingredients are incorporated. In a large bowl toss the romaine lettuce  with the dressing. You may have a little left over depending on the size of the head of lettuce you use. Top the pizza crust with the lettuce and chopped avocado. Serve immediately. Optional: add more green onions for garnish.
