With lots of communities cancelling Halloween this year, a fun alternative is making your favorite candies at home! I shared a healthy version of Almond Joy Bars with Western Mass News. Check out the clip here and try the recipe below! Almond Joy Bars
3 cups shredded, unsweetened coconut 1 tsp. vanilla extract 1/4 cup plus 1 tbs. unrefined coconut oil 1/4 cup honey or maple syrup Pinch of sea salt 1/4 almonds, chopped 1 cup dark chocolate chips, I used Enjoy Life plus 1 tbs. coconut oil Instructions Spray an ice cube tray with cooking spray and set aside. In a food processor, process the shredded coconut 1/4 cup plus 1 tbs. coconut oil, honey, vanilla extract and salt until well combined. You want the mixture to make almost like a paste, 2-3 minutes. Portion out the coconut mixture into the ice cube tray and freeze for 15-30 minutes. A few minutes before you take out the coconut centers, melt the chocolate with the 1 tbs. of coconut oil. ( You can do it in the microwave in 30 second intervals so the chocolate doesn't burn.) Line a baking sheet with parchment and place a cooling rack over it. Dip the centers into the chocolate and coat. Place the coated candies on the rack so the excess chocolate drips off. Add the chopped nuts on top before the chocolate hardens. Refrigerate the finished candies until the chocolate hardens about 15-20 minutes. Enjoy!! Leave a Reply. |
