Cranberry Energy Bites

Is your Mini Foodie loosing steam while remote learning? Try these quick and easy Cranberry Balls for a perfect energy giving snack! Check out the clip here and recipe below. 
Cranberry Energy Balls
1 cup raw almonds
1 cup raw cashews
1 cup Mejool Dates
1 cup dried cranberries
1 teaspoon vanilla extract
1 teaspoon lemon 
pinch of sea salt
Optional: 1/2 tsp. ground cinnamon or 1/4 cup of mini dark chocolate chips

Instructions
Process the nuts in a food processor first to help break them up. Add the dates, cranberries, vanilla, lemon juice, salt and cinnamon if using. Process until a sticky paste like dough forms.( Add chocolate here if using, only pulse once or twice to incorporate.) You may have to stop and scrape down the side once or twice. Use a 1 tbs. scoop to form little balls. Refrigerate in an airtight container for up to a week or freeze for up to 3 months.
