Eating healthy can be overwhelming, so I shared my one pot soup recipe that's full of veggies and flavors to help simplify for you! Check out the clip over on Studio 10 on WJAR. Ingredients:
1 onion 4 tbs. olive oil 2 parsnips 2 medium sweet potatoes 2 medium purple potatoes or yukon golds 2 bunches baby carrots 1 bunch lacinato kale 4 cups veggie stock 1 tsp. ground cumin 1/2 tsp. ground ginger 1/2 tsp. ground cinnamon 1/4 tsp. cayenne pepper 3 tbs. tomato paste 3 tbs. chopped fresh parsley Salt and pepper to taste Juice of half a lemon Instructions: In a large dutch oven heat the olive oil on medium high heat. Add onion, carrot, sweet potato and purple potatoes saute until veggies start to get soft about 5-8 minutes. Add to the pot the ground cumin, ground ginger, ground cinnamon, cayenne pepper and tomato paste. Stir thoroughly until the tomato paste and spices combine with the veggies and everything turns a nice rust color about 2-4 minutes. Pour in the 4 cups of veggies stock and bring the tagine to a boil. Once boiling lower it to a simmer and let cook for 15 minutes, stirring occasionally. Lastly, add in the chopped kale and parsley and cook for 5 minutes until wilted. Squeeze the juice of the lemon over the tagine right before serving. Leave a Reply. |
