I had so much fun joining the team at Studio 10 in the kitchen. We whipped up my delicious (& healthy) Pumpkin Latte Bread for the holidays. Check out the clip here & recipe below! Ingredients:
1 Large Egg ¼ cup Olive Oil or Coconut Oil ¼ cup Pure Maple Syrup ¾ cup Pureed Pumpkin ½ a Banana, mashed 2/3 cup Coconut Sugar ½ tsp. Kosher Salt 2 tsp. Baking Powder 1 ½ tsp. Ground Cinnamon ½ tsp. Ground Ginger 1/8 tsp. Ground Cloves ¼ tsp. Ground Nutmeg ½ cup Strong Brewed Coffee, cooled 1 ½ GF All Purpose Flour ¼ cup Almond Flour 1 cup GF Rolled Oats Instructions: Preheat the oven to 375°, prepare a loaf pan by lightly greasing and lining it with parchment. In a large mixing bowl add the eggs, pumpkin, mashed bananas, maple syrup and olive oil. Whisk until fully combined. Stir in the coconut sugar and coffee. In a small mixing bowl add the all-purpose flour, almond flour, kosher salt, baking powder, ground cinnamon, ground ginger, ground cloves, ground nutmeg and whisk until fully combined. Add in two batches the flour and stir gently until fully incorporated into the wet ingredients. Don’t over mix, fold in the rolled oats. Add batter to the prepared pan and smooth the top, decorate with pepitas. Bake for 40-45 minutes. Let cool for 30 minutes before cutting. Leave a Reply. |
