The nights are getting longer and the weather is getting cooler but enjoying a glass of wine and small bite are always in season.
The unofficial end of summer has come and gone and we are officially into fall. Whether you are ready to bring on the PSL and apple picking, we all need a sweet, savory or spicy snack. No matter which flavor you pick, you can never go wrong with ricotta toast and a glass of wine.
Sweet, Savory and Spicy Ricotta Toasts
Bread options: Sourdough, Ciabatta or any thick artisan loaf
1 cup ricotta cheese
1 tsp. lemon zest
Salt and pepper to taste
2 tsp. olive oil
Preheat the oven to 400°. Line a rimmed baking sheet with parchment paper. Cut bread into about a ¼ inch thick pieces. Place sliced bread on baking sheet and drizzle with olive oil. Bake for 8-10 minutes or until golden brown. (Note: You may need to turn the try halfway to get even browning.)
In a small bowl mix ricotta and lemon zest until fully incorporated. Spread mixture on toasted bread.
For Sweet Ricotta Toast: Top with 2 tbs. chopped pistachios or nut of choice, drizzle with honey and more lemon zest if desired.
For Spicy Ricotta Toast: Sprinkle with 1/8 tsp. crushed red pepper flakes, drizzle with honey, garnish with a chiffonade of fresh basil and a pinch of flaked sea salt.
