Summer recipe: Peach Prosciutto Ricotta Bruschetta

Now that summer is in full swing and summer barbecues are happening, it's important to spend time with your guests and not get stuck in the kitchen! Ashley shares a simple recipe that everyone will enjoy.
​Ingredients:
1 large baguette, sliced
2 tbls. olive oil
1 cup whole milk ricotta
2 large peaches, chopped
1 ½ tbls. Honey
¼ cup basil, mint or microgreens
4 slices prosciutto, sliced into strips
Salt and pepper to taste
Optional: 2 tbls. pistachios, chopped

Instructions:
Preheat the oven to 350 degrees.

​On a lined baking sheet brush the sliced baguette pieces with olive oil on both sides. Bake for 6-8 minutes or until golden brown.

In a food processor or blender add the ricotta, salt, and pepper to taste and blend until smooth.

In a medium bowl, add the chopped peaches, honey, and basil lightly until combined. Assemble the crostini by layering it with a spoonful of the ricotta, a slice of prosciutto, a spoonful of the peach mixture, and top with a few more slices of basil. Serve immediately.
