Super Charged Apps for Super Bowl

Picture
It's February and you know what that means Super Bowl Sunday! Not to mention we have whole lot of Winter Olympics to watch as well. What better way to celebrate these fabulous athletes, but by eating a delectable healthy snack!
We all know game day means loads of snacks, drinks and treats that may not help you stay true to your 2022 health goals. Why not find a way to enjoy your game day favorites but in a healthier way! My baked Crispy Buffalo Cauliflower with Yogurt Ranch will have you cheering all day.

Baked Crispy Buffalo Cauliflower Ingredients:
1 large head cauliflower or 2 small heads ( about 5 1/2 cups)
1 cup non-diary milk
3/4 gluten free flour
1/4 cup almond flour
1 tsp. onion powder
1 tsp. paprika
1/4 tsp. sea salt
1 cup hot sauce, your favorite brand
1 tbs. unsalted butter

Yogurt Ranch Dip Ingredients:
1 cup Greek yogurt or skyrr
1 tbs. fresh chives, chopped
2 tbs. fresh dill, chopped
1 tsp. fresh parsley, chopped
1/2 lemon, zested
Salt and Pepper to taste

Instructions:
Preheat the oven to 425 degrees. In medium mixing bowl combine flour, almond flour, milk, salt, onion powder and paprika. Mix until a batter forms. Toss the cauliflower florets into the batter and gently coat. On a baking sheet lined with parchment, spread out the cauliflower florets into a single layer. Bake for 15 minutes and then turn the florets and continue baking them for another 10 minutes.

In a heat safe bowl melt the butter and hot sauce together in microwave or on the stove top until well combined. Toss the baked cauliflower in the sauce and return to the baking sheet. Cook for another 15-18 minutes.

While the cauliflower is baking make the Yogurt Ranch Dip. In small mixing bowl add the yogurt, chives, dill, parsley and lemon zest. Stir until combined. Season with salt and pepper to taste. (Note: This can be made ahead of time and kept in the fridge until ready to serve. I suggest you make more than you need because people will go crazy for this.)

Serve the Crispy Buffalo Cauliflower with the Yogurt Ranch Dip.
