Sweet and Savory "Hot" Pockets

 
Sweet and Savory
You remember when we were kids and Hot Pockets were all the rage. I remember wanting to try them so bad. Then I tried them at a friends house and I  was so disappointed. 
My parents never really bought to much processed food or traditional kid snacks for me. We would have the occasional bag of chips or every once and awhile Oreo cookies for a sleepover. As I got older I realized my parents did me a huge favor not letting me have all those processed snacks. I find as an adult and chef, I always wonder if I can make classic processed foods into something healthier. 

Ingredients:
1 pound whole wheat pizza dough
1 egg beaten

Savory Filling:
1/2 pound organic turkey or chicken Sliced
1/4 pound sliced cheese of choice
2 tbs. honey mustard

Sweet Filling:
1/2 cup whole milk ricotta cheese
3 tbs. strawberry jam or favorite flavor
1 egg

Instructions:

Preheat the oven to 375 degrees and line 2 baking sheets with parchment paper. Divide the dough into 6-8 pieces. Roll each piece out to a 4 1/2 inch round. In a small bowl mix together ricotta cheese, 1 egg and strawberry jam until fully incorporated.

Brush the rolled out round of dough with the honey mustard, making sure to leave a border around the edge. Fill the middle with a few slices of cheese and chicken.  Brush the edges of the dough with the beaten egg and fold over the other side. Crimp the edges like a pie and seal tight. Brush the outside with egg wash and place on baking sheet. Continue to do this until you run out of ingredients.

For the sweet filling add 1 1/2 tbs. of filling to the center of the dough. Egg was the edges and then folder over continuing to crimp. Egg wash the outside and place on baking sheet. When all the pockets are done make a small slit in the top with a knife. Bake for 23-25 minutes until golden brown. You can freeze them uncooked before egg washing the outside for up to a month.
