Sweet Potato Vegan Chocolate Fudge
Looking for a vegan treat that satisfies your sweet tooth! My Vegan Sweet Potato Fudge is the ultimate chocolatey treat and nourish your body from within. Packed with wholesome ingredients and bursting with flavor, this fudge recipe is a delightful addition to your dessert repertoire.
Sweet potatoes have fast becoming one of my favorite ingredients of all time. They are my heroes since it is one of the few things on my list of tolerated low-histamine foods. Sweet Potatoes are nutrient dense rich in fiber, vitamins, and antioxidants, sweet potatoes offer a host of health benefits, including supporting gut health, boosting immunity, and promoting glowing skin. I figured how could I go wrong trying to add it into a dessert, they use chickpeas right?

Unlike traditional fudge recipes loaded with refined sugar and unidentifiable fats, my Vegan Sweet Potato Fudge offers a healthier alternative that doesn't skimp on taste. Sweetened naturally with maple syrup and packed with wholesome ingredients, this fudge is lower in sugar and higher in nutrients, making it a dessert  you can enjoy feel good sharing with the kids.

Ingredients:
3/4 cup sweet potato, cooked and cooled
3 tbs. tahini 
1/4 tsp. sea salt
1 tsp.  vanilla extract, alcohol free
1  cup vegan dark chocolate chunks, melted
1/4 cup maple syrup
1/4 cup coconut milk, from the can

Instructions:

Prepare an 8x8 glass baking pan and line it with parchment paper, this will help the fudge release when its set. In a food processor add the sweet potato, tahini and coconut milk. Pulse the ingredients until they combine and the sweet potato gets smooth. Add in the sea salt, vanilla extract, maple syrup and melted chocolate. Blend until fully combine. Pour into the baking dish a smooth out in one event layer. Optional sprinkle a little bit of flaky sea salt over the top. Freeze for 2 hours before cutting into squares. You can keep it in the freezer because I enjoy the texture it is almost like fudge ice cream. It will be happy living in the refrigerator for up to 5 days in an airtight container.
