With school back and session and after-school activities taking over, healthy & easy dinner recipes are a must!
1 cup cooked shredded chicken
½ cup farro, cooked
¼ cup cherry tomatoes, halved
2 tbs. carrots, chopped or shredded
½ cup mixed greens of choice, I prefer arugula
¼ of a small avocado, sliced
¼ cup Greek yogurt
2 tbs. apple cider vinegar
1/3 to ½ cup hot sauce or buffalo sauce of choice
1 tbs. feta or cotija cheese
Salt and Pepper to taste
Optional: 2 tbs. fresh parsley or chives, chopped, pickled red onions
In a medium bowl mix together the ¼ cup Greek yogurt, 1/3 cup hot sauce, a pinch of salt, 2tbs. fresh parsley if using and finally the 2-tbs. apple cider vinegar. Mix well until fully combined. Once combined fold in the cooked shredded chicken until well coated in the sauce, set aside.
In a serving bowl layer, the bottom with the cooked farro, season with salt and pepper to taste. Layer on top of the farro in sections the halved cherry tomatoes, arugula, carrots and the sliced avocado. Season with salt and pepper to taste.
(Note: it is important to season every layer of a dish.)
In the center of the serving bowl place the prepared buffalo chicken. Top with feta and fresh chives if using. Note: All components can be done ahead and stored separate until ready to eat.
