Cook along with me week is finally here! I am so excited to share with you these delicious and nutritious recipes. Starting with one of my personal favorites the Frozen Yogurt Bites...
These bites are a cool treat that kids and adults will love. Even the pickiest of eaters will be asking for seconds. Perfect for school lunches or an after school snack.
1 cup plain Greek yogurt, unsweetened
1/2 cup berries of choice or other soft fruit
3 tbs. pure maple syrup
3/4 cup favorite granola made or store bought
Line a cupcake pan with cupcake liner and set aside. Make sure before you start you have room in the freezer for when you are done. In a medium bowl add the fruit and 1 tbs. of the maple syrup. Gently mash the fruit and maple syrup until slightly mashed. Stir in the Greek yogurt gently and the rest of the maple syrup.
In the cupcake liners add 1/2 tsp. of granola to cover the bottom. Fill the cupcake liners 3/4 of the way with the yogurt fruit mixture. Freeze for at least 2 hours. Remove from the tin and place in freezer bags. The will keep in the freezer for 1 month.
