We had a chance to visit with our friends from Fogbuster Coffee Works on tonight's episode of Food for Life. I made two recipes with their delicious, full bodied and dark roasted coffee.
Coffee is the perfect ingredient for savory and sweet recipes. Coffee brings out chocolate flavors in baking, but in savory cooking it helps balance acidity in recipes.
1/2 cup Fogbuster Dark Roasted Coffee of choice
2 cups ketchup
2 tbs. apple cider vinegar
1/4 cup molasses
2 tbs. honey
1 tsp. chipotle powder
1/2 tsp. chili powder
1/2 tsp. cayenne powder
Sea salt and black pepper to taste
For the Sweet Potatoes:
2 medium sweet potatoes, cut into long strips
1 1/2 tbs. olive oil
Preheat the oven to 400 degrees. Toss the sweet potato strips' with the olive oil, sea salt and lay them out in a single layer on a parchment lined rimmed baking sheet. Bake for 28-30 minutes. In a medium saucepan over medium heat, add the ketchup, coffee, apple cider vinegar, molasses, honey, chipotle powder, chili powder and cayenne pepper. Stir until well combined. Simmer for 10-15 minutes until it thickens. Check for seasoning and adjust salt and pepper to taste.
